Option (1) Pay by consumption (n/a
for weddings)
(a) End of night tally
|

Table receives a bill at
the end of the night with the total amount owing for drinks.
The advantages are that service is faster, especially on a
busy night. Useful for general purpose parties.

b) Bar Tab - fixed
|
|
Function organiser sets
a fixed amount of monies set aside for beverages. As soon as
that amount (approximately) is reached, the bar 'goes dry'.
Patrons can, however, after that order individual drinks and
pay as they go. This method is sometimes useful for social
clubs.

c) Bar Tab - floating
|
|
Function organiser sets
a fixed amount of monies set aside for beverages. As soon as
that amount (approximately) is reached, the organiser is
contacted and asked if they want the bar to 'go dry' or the
'tab' amount to go higher. This method is sometimes useful
for engagement parties & 21st birthdays etc.
