Born in Yokohama and raised in Tokyo / Chiba prefecture, Mayumi worked at the Tokyo Sheraton and Manhattan Hotel Wedding and Function centre.

She is qualified to teach Japanese caligraphy and enjoys hobbies of golf & caligraphy. She is also surprisingly good at karoake

head chef - tetsuya sakamoto
Born Tokyo / Saitama Prefecture, Tetsuya worked from an early age in a traditional sushi bar and traditional wedding restaurant before going to Australia to seek his fortune and learn to scuba dive.

He has also worked on the front counter at Nobu Melbourne making sushi for such stars as Nicole Kidman and Matt Damon, and also in Dubai's arguably best modern Japanese restaurant 'Bang/Mirai' near the Burj.

Tets is looking forward to pushing the envelope in Perth with exciting new food using great Australian produce.

masayuki ito hails from the southern part of Japan, near the large city of Fukuoka. His interests lie in slow cooking techniques, sweets and an unhealthy addiction to trashy food shows on TV. Whilst OK with sushi he tends to concentrate on cooked foods.

Masa is in the position of 'Nikata' at Tsunami.

Born in Perth Western Australia, Brett spent some of his early childhood living in Yokohama with his mother, learning to speak Japanese fluently (although he has forgotten a lot of it) and went on to spend most of his life around Japanese people and their culture. He enjoys eating 'natto', playing the piano (often at the restaurant) and playing with his Apple Mac.
